Updates the entity analytics documentation to match the current UI labels in the entity details flyout. Several section, tab, and control names changed in 9.4 and later, so this aligns the docs with what users see now, and adds notes for readers on Elastic Stack 9.3 and earlier where the names differ.
Where it improved readability, phrasing now refers to sections generically instead of quoting exact labels, so the content stays accurate across versions.
Also removes three outdated screenshots that showed the previous labels and didn't add user value.
Resolves #7652
